Pasta a Choux (per bigné, éclairs, chantilly)

Non so cosa mi sia preso, sarà che sono disoccupata e non ho niente da fare, sarà che sono golosa, sarà che mi piace cercare sempre nuove sfide culinarie, sarà che questi il Professore ancora non li aveva assaggiati, ma preso da un momento di ispirazione mi son messa a fare i pasticcini! 
Sono rimasta molto soddisfatta del risultato, per essere la prima volta, ma sia l'aspetto che la pasta possono migliorare. Se avete esperienza con la pasta a choux e qualche consiglio in merito da regalarmi, non esitate a lasciarmelo nei commenti! per ringraziarvi vi manderò un pasticcino virtuale! 
Ricetta di Giallo Zafferano (ho raddoppiato le dosi).

Ingredienti per circa 36 bigné:
100 g burro
200 ml acqua
1 cucchiaino di zucchero
2 pizzichi di sale
130 g farina
4 uova medie a temperatura ambiente



In un pentolino mettete l'acqua, il sale, lo zucchero e il burro a tocchetti, e fate sciogliere. Quando comincia a bollire allontanate dal fuoco e aggiungete la farina setacciata. Mescolate velocemente per evitare i grumi, poi rimettete sul fuoco continuando a sbattere il composto con un cucchiaio di legno. Il composto si asciugherà formando una palla morbida. Quando sul fondo apparirà una patina bianca sarà pronto. Togliete dal fuoco e rovesciate su un piatto a raffreddare.
NOTA: A me la patina non si è formata. Continuavo a sbattere e rimescolare ma nulla. Ho pensato che magari dipende dal materiale della pentola? La mia era antiaderente nera con fondo spesso. Il composto mi sembrava pronto quindi ho proceduto lo stesso… Non so se ha causato cambiamenti nell'impasto finale. Se avete qualche consiglio da darmi, sono tutta orecchie!
Accendete il forno  220 C e rivestite una placca grande con carta forno.
Una volta che il composto si è raffreddato, mettetelo nella planetaria (o in una grossa ciotola se lo fate a mano), e con l'attacco a foglia lavorate aggiungendo un uovo per volta. Lasciate incorporare l'uovo prima di aggiungerne un altro. Impastare fino a quando sollevando l'impasto formerà un nastro. 



Aiutandovi con una spatola, inserite il composto in una tasca da pasticcere con punta liscia (Wilton 12), e formate tanti mucchietti di pasta allineati. Per fare i 'funghetti' fate un mucchietto, poi interrompete la pressione sulla tasca spostandovi verso il basso, e riprendete a schiacciare per fare uscire un secondo mucchietto, leggermente più grande del primo. Non so se ho reso l'idea… Altrimenti fate dei tronchetti lunghi circa 5cm come per gli éclairs.
Tenete conto che i bignè crescono cuocendo, quindi non fateli troppo grandi. I miei sono venuti leggermente più grandi di quelli che avevo in mente.
NOTA: I miei mucchietti si 'scioglievano' non appena formati, quasi spiaccicandosi. Questo è strano. Non mi ha creato particolari problemi, perché poi in forno si sono formati bene gonfiandosi che è un piacere, ma vorrei sapere come mai. Potrebbe essere per via del caldo? Qui ieri c'erano 29 gradi. Oppure per le uova Jumbo che ho usato per sbaglio? Qui il Professore compra solo Jumbo e io le ho usate senza pensare. Non che siano poi così grosse, per la definizione… A me sembrano uova normali. Mi aspettavo di più dalle galline americane…. Comunque, secondo me è stata colpa delle uova. Secondo voi?
Mettete in forno statico per 15 minuti. NON APRITE MAI LO SPORTELLO! Quando manca 1 minuto allo scadere dei 15 abbassare la temperatura a 190C e cuocete per altri 10 minuti. Dopodiché spegnete e mettete un cucchiaio di legno tra lo sportello e il forno per tenerlo leggermente aperto e permettere ai bignè di asciugarsi bene all'interno. Li vogliamo belli vuoti così da poterli riempire di crema, questi bignè!
Se volete, quando spegnete il forno potete punzecchiare qualche bignè con uno stuzzicadenti sia per verificare che sia vuoto al suo interno, sia per permettergli di asciugarsi bene. Io ne ho punzecchiato qualcuno e quando ho visto che erano vuoti ho smesso senza star lí a bucarli tutti.
Lasciateli lí per 10 minuti, poi tirateli fuori e fateli raffreddare completamente prima di farcirli.
Se sono venuti bene saranno leggerissimi e vuoti all'interno.



CHOUX PASTRY (for Puffs, Beignets, éclairs, chantilly)
This recipe is used to prepare some sweets that you can find in any Italian bakery in Italy. Bakeries in Italy are different from the american ones: there you can find gelato, granita (a kind of shaved ice), these and other types of 'pasticcini', cannoli (not the sicilian ones that everybody knows, a different kind made of puff pastry and filled with custard or zabaione or chocolate cream), cioccolatini (small pralines, or chocolate sweets), cakes, croissants, and also something savoury, like pizzette (small pizza made of puff pastry dough). You can't find any bread, though, which is sold in different places, called 'panetterie'. I miss the smell of those bakeries! They open around 9.30 am after one night of work and if you go there in the early morning you can get everything still warm and crispy from the oven and the smell is just like… Heaven! I'd say. If there is a Heaven, I really hope it's like an italian bakery. I know I would be happy there.

Ingredients for about 36 pieces:
100 g butter
200 ml water
2 pinches of salt
1 tsp sugar
130 g flour
4 medium eggs, room temperature

Put the water and the butter cut into small pieces in a pot, together with the salt and the sugar. Let melt and stir. Once it gets to a boil, remove from the heat and add the flour, sifted. Stir quickly to avoid any lumps, then put back on the heat and let it dry a little, beating with a wooden spoon. You will soon get a ball and on the bottom of the pot you will see a white layer. At that point the dough is ready. Put it on a plate and let cool.
Pre-heat the oven at 430F and covered a baking sheet with parchment paper.
When the dough is cooled, put it in a Kitchen Aid (or in a big bowl, if you use your hands), with the paddle attachment, and beat it adding one egg at a time. Do not proceed with a second egg until the previous one is completely incorporated.
The Choux Pastry is ready when falling from the spoon it will hold its shape. 
Put the dough into a pastry bag with a plain round tip (Wilton 12 will do), and pipe small round mounds of dough on the baking sheet. Leave some space in between because they will grow while baking. If you want you can make different shape, for examples 2 inches long sticks as for the éclairs.
In a static oven for 15 minutes, then lower the temperature to 370F and bake for other 10 minutes. DO NOT OPEN THE OVEN DURING ALL THIS TIME! 
Then turn off the oven and let the puffs inside with the oven door slightly open, so they can dry completely inside.
Let them there for at least 10 minutes, then take them out of the oven and let cool completely before filling them.
They should be very light and empty inside.
